When Japanese chefs prepare kaiseki, they don't just consider the taste of the food. They also consider the food's texture, colour, and appearance. Chefs even match the colour of the food to the colour of the plate and the chopsticks. Of course, although haute cuisine and kaiseki share many similarities, the food itself is quite different.
