B1 : Five-coloured sky rice is an important traditional dish of many ethnic minorities in the northern mountainous regions. People call the dish five-coloured sky rice because it has five colours: red, yellow, green, purple and white. The things that create the colours are not chemicals but natural roots and leaves. The five colours of the dish represent five elements of life according to Vietnamese beliefs: yellow is earth, red is fire, green is plants, white is metal, and purple or black is water. People believe that these five elements create harmony between heaven and earth. Five-coloured sky rice is usually made and enjoyed at Tet, in festivals and ceremonies, on special occasions, and whenever the family has guests.

2.Put five cups of cold water into a glass.

4.Mix all ingredients together, put in some ice and enjoy lemonade.

1. Boil the noodles in a pot with water.

3. Boil another pot of water till boiling and put the noodles into the hot boiling water and then shut the fire.

4. Only at this stage when the fire is off, and while the water is very hot, put the soup powder into the water, to make noodle soup.

5. However, if you need dry noodles, take out the noodles and add the soup powder and toss it to get dry noodles.

  • 200 g minced pork
  • 200 g shrimp (minced)
  • 100 g taro (shredded)
  • 100 g carrot (shredded)
  • 20 g dried wood ear mushrooms (soaked in hot water and julienne)
  • 50 g glass noodle (soaked in water for 10 mins)
  • 1 tbsp shallot (minced)
  • 1 tbsp garlic (minced)
  • 1 egg
  • 1 bean sprouts (7 oz) (optional)
  • 1 block tofu (optional)
  • salt, pepper, sugar, chicken stock
  • 20 pcs rice paper wrapper

cách làm 

– Step 1: In a large bowl, combine the minced pork and minced shrimp together and season lightly with salt, pepper, sugar and chicken stock (1/2 tsp each). Also add 1 tbps minced shallot and 1 tbsp minced garlic. Mix well in a circular motion till combined.

– Step 2: Combine the seasoned meat & shrimp with all the shredded vegetables, mushrooms and glass noodle. Mix well. To help all the ingredients adhere better, add 1 egg or just the egg white. Mix well again and leave to sit for about 15 minutes.

– Step 3: To soften the rice paper for wrapping, moisten the rice paper with a damp cloth instead of soaking in water.

– Step 4: Scoop a heaping tablespoon of the filling and place near one end of the rice paper. Roll until you reach the center, then fold both sides inwards and continue to roll up till the other end.

– Step 5: Heat a generous amount of oil in the pan until you see small bubbles around the chopsk. Then keep the heat on medium and start frying. The rice paper could be sky at first so leave some spaces between the rolls. After a few minutes, it’s ok to bring them closer to one another. Deep fry until they turn golden brown.

– Step 6: Place them on paper towel to drain off the excess oil. Serve with dipping fish sauce, fresh vegetable and herbs.

Firstly, we beat the eggs with salt, pepper, onion. Then we heat the pan and add 2 tablespoons of oil. When the oil is hot, pour the the mixture into the pan. When it is hot, take it out and clean out the pan. Next, we add 2 tablespoons oil, add the rice, stir-fry for a few minutes, using chopsticks to break it apart, stir in the soy sauce. When the rice is heated through, we add the mixture back into the pan. Remember to serve hot.
